TIP: Read through the full recipe before starting.

Mix turkey mince and sriracha in a bowl and season with salt and pepper. Then mould into a burger patty.

TIP: You can do this ahead of time and put the patty back into the fridge to keep in shape. Even make a batch and freeze for later use.

Slice up the potato into about 1cm wide pieces. Lay on top of baking paper on an oven tray. Spread out evenly.

TIP: You don’t need to peel the sweet potato first. You can just cut any gnarly bits off first.

Drizzle a small amount of olive oil over the sweet potato and dust with the paprika.

Tear up a handful of iceberg lettuce.

Mix the yogurt and mango chutney in a bowl, squeezing fresh lemon juice in from the lemon wedge.

Make.

{Preheat oven at 200°C}

Cook the sweet potato in the oven for about 20 – 25 minutes, until golden brown. You don’t need to turn or shake them.

Go have a beer for 10 minutes.

With about 10 minutes left to go on the sweet potatoes, preheat a pan on a medium to high heat.

Add a teaspoon of olive oil and then add the burger.

After a few minutes flip the burger. Keep cooking for around 4-5 minutes on each side, or until cooked through and nice and brown on the outside. This will depend on the heat from your pan and thickness of the burger.

TIP: If the burger is nice and brown on both sides but you are worried it might not be cooked in the middle yet you can either turn the heat right down and cook gently for longer, or add the bottom of the oven with the sweet potatoes.

Once all cooked, lightly toast your brioche bun in a toaster or in the hot oven.

Season your sweet potatoes with salt.

Build your burger with lettuce and patty, adding some cool mango sauce saving some to dip your chips in to.

Enjoy.
