Bean-less Burrito with Mango Yogurt

Quick, fresh and delicious.

Chicken and vegetable burrito with a refreshing mango yogurt. Perfect for a quick meal made from leftover ingredients. It’s only bean-less because i’m allergic to them!

Ingredients
(Serves 2)

2 x cooked chicken breasts
1 x small onion
1 x bell pepper
250g cooked rice
20g cheddar cheese
2 x wraps

1 x tomato
iceberg lettuce
pickled jalapenos
fresh parsley
60g greek yogurt
1 x tablespoon mango chutney
1 x lemon wedge
2 x garlic cloves
1 x tablespoon chilli flakes
1 x tablespoon cumin
1 x tablespoon paprika
1 x olive oil


Basic Summary

  1. Chop onion and pepper, shred cooked chicken, crush garlic, and grate cheese
  2. Mix yogurt and mango chutney, with a squeeze of lemon
  3. Fry onion, pepper, and chicken
  4. Add spices, cooked rice and garlic
  5. Heat up wraps
  6. Assemble burrito with all ingredients

Prep.

TIP: Read through the full recipe before starting.

Chop the peppers, onions and tomato up into fairly small pieces.

Peel and crush the garlic.

Tear up a handful of iceberg lettuce.

Grate the cheese.

Shred the cooked chicken into small pieces.

Mix the yogurt and mango chutney in a bowl, squeezing fresh lemon juice in from the lemon wedge.


Make.

{Preheat a frying pan on a medium – high heat}

When hot add the olive oil, and then your onions and peppers.

After 1 minute add the chicken and spread out in order to lightly brown.

TIP: If the pan is getting slightly dry and food is sticking too much, just add a touch of water to loosen it up. This water should evaporate over time anyway.

After 3 minutes your chicken should be nice and brown all over and the veg has softened. Now add the chilli flakes, cumin, and paprika. Season well with salt and pepper too.

This will dry out the pan a little, so feel free to keep adding a splash of water to loosen it up.

Now add the cooked rice and mix well. Adding another splash of water to rehydrate the rice.

After 2 minutes add the garlic, stir in well and take off the heat.

NOTE: Even though the heat is turned off, the pan is still hot and will continue to cook the food with the residual heat.

Now go put the wraps in the microwave for 25 seconds on a plate.

Once the wraps are warm, assemble the burrito.

Adding lettuce, tomatoes, jalapenos and cheese with the hot ingredients on top of the wrap.

Finish with the mango yogurt and fresh parsley and get wrapping!
